Phase 6.1 — Migration of Plex (Plex Hell)

The full move off Plex and onto Jellyfin.

On hold pending Jellyfin client parity. The largest blocker remains iOS / Apple TV casting, followed by native Camera/Photo upload (worked around today by running Immich alongside Jellyfin). Offline downloads work on Android and the legacy iOS app, but not yet in Swiftfin.

Several applications have already moved off native Plex login.
